The most reliable way to remove a specific limb is to edit it in the FCS.
Save Editor
First launch the FCS, easiest method is to select the "Launch Game Editor" option on the initial popup when running Kenshi through Steam. Once you're in, you'll be met with a list of mods to edit or turn off. Just close this with the x in top right of the window, you don't need it for save editing.
